Now that I’ve totally given up plain pancakes and switched to these, I’m tired of hauling out the 500-page Vegetarian Times Complete Cookbook every time I want to make them . . . so I typed up the recipe.
Good Grains Pancake Mix
from Vegetarian Times Complete Cookbook, MacMillan, 1995
This recipe makes enough mix for 3 batches of pancakes (approximately 9 pancakes per batch).
1 cup rye flour
1/2 cup wheat germ (I use ground flax seeds)
1 cup whole-wheat flour
1-1/2 cups unbleached white flour
1/2 cup cornmeal
1/3 cup sugar
2 Tbls. baking powder
1 tsp baking soda
1 Tbls salt
Stir together all the ingredients. Divide into thirds (just under 2 cups each) and seal each batch in a plastic bag. Store in your freezer.
When you are ready for pancakes, combine one bag of mix (approx. 2 cups) with:
1-1/4 cups milk (regular, skim, soy, or buttermilk)
2 eggs (or 1/4 cup egg substitute)
2 Tbls. oil
Combine until just mixed. You may need to add more milk to get the right consistency.
To cook the pancakes, pour 1/4 cup batter per pancake onto a hot nonstick griddle. [Lucinda uses a greased cast iron pan.] Cook until bubbles form and the underside is lightly browned, turn and cook the other side until browned (approximately 2 minutes per side). Repeat with the remaining batter.
Notes
- This recipe claims to make 10 pancakes and feed 5. I’ve never gotten more than nine pancakes out of it and I can easily eat three of those myself. I put the others in zip-lock bags and toss them in the freezer; 90 seconds in the microwave and breakfast is ready!
- When I want to make these extra healthy, I sprinkle some raisins and chopped walnuts onto the top of each pancake, just after it is formed on the griddle. You probably could just mix fruits and nuts into the batter if you like.

heaping 1/4 tsp baking soda
