Dolores' Banana Bread

  1. Preheat oven to 350°F. Grease bottom of loaf pan with shortening.
  2. In a medium bowl, combine the dry ingredients (flour, baking soda, salt, baking powder). Set aside.
  3. In a large mixing bowl, cream the sugar and the shortening by beating on high speed until smooth and fluffy.
  4. Mix in the eggs. Beat on high for 1-2 minutes until fluffy and well combined. Add bananas and water. Mix until combined.
  5. Gradually add dry ingredients (flour mixture) until combined.
  6. Stir in nuts (if using).
  7. Spread batter into prepared pan.
  8. Bake for approximately 70 minutes in preheated oven. Check for doneness with toothpick after 60 minutes, if the toothpick comes out dry, it's done.
  9. Set pan on wire rack to cool for 15 minutes.
  10. Turn bread out of pan and allow to finish cooling completely before slicing.

Dolores' Holiday Jello Mold

also known as: Lemon Jello Mold or "Often Left in the Frig" Jello Mold :)

  1. Prepare Dream Whip: Mix whipped topping mix, milk and vanilla in deep narrow-bottom bowl with electric mixer on low speed until blended. Then, beat on high speed about 4 minutes or until topping thickens and forms peaks. Set aside.
  2. In a separate bowl, mix lemon jello with 1 cup boiling water. Stir until the mix is completely dissolved (approx. 2 minutes). Quick set by adding 2 cups ice cubes. Once it begins to thicken, remove any remaining ice cubes.
  3. Gently fold* the apples, cheese, and pineapple into the jello.
  4. Gently fold in prepared Dream Whip.
  5. Chill for several hours.
  6. Remember to remove from refrigerator before everyone is done eating dinner! :)

* "Fold" means to stir gently using large scoops to move the stuff at the bottom to the top. You are trying to distribute the items evenly without turning everything to mush :)
